Château La Conseillante
The Château La Conseillante is among the elite of the greatest Pomerol wines, leaving no wine lover indifferent. It was Catherine Conseillan who, in 1735, decided to give her name to this already renowned Domaine, whose neighbors include no less famous Châteaux such as l'Evangile, Pétrus and Cheval Blanc.
In 1871, the property was acquired by the Nicolas family and today, Jean-Valmy Bertrand Nicolas represent the fifth generation to produce a great wine whose reputation has crossed borders.
The Château La Conseillante is planted on 12 hectares of vines on soils of grey clay and sandy gravel with a subsoil of red clay due to the presence of iron dross, conferring a unique singularity to the wines.
The grape varieties are 80% Merlot and 20% Cabernet franc. The wines are aged for an average of 18 months in French oak barrels, 50 to 70% of which are new. 3% of production is aged in amphorae.
The estate produces a Second wine, Duo de La Conseillante, which offers another facet of this exceptional terroir.
The Château La Conseillante delivers quite exceptional wines, renowned for being silky, elegant and balanced in power, marked by a finesse and mineral touch found nowhere else.

2009 is a historic year for the Bordeaux vineyard, a very great vintage. The climatic conditions were very sunny, from the flowering of the vines to the harvest, with very little rainfall. The month of August was very dry without excessive heat and a very nice month of September, all these conditions will have given a grape with an excellent aromatic potential.
Blend of the 2009 vintage: 81% Merlot, 19% Cabernet franc.
The robe is an intense purple color, with subtle garnet tints.
The nose is a real peacock's tail, releasing notes of ripe black fruits, marzipan and violet, enhanced by peppery spices and tobacco leaf.
The attack is supple and fleshy, evolving on a particularly suave and voluminous body. The tannins are fine and coated, allowing the wine to reveal freshness and balanced power until a long and creamy finish that never ends. A great Pomerol without a doubt.
Food and wine pairing:
Chateau La Conseillante 2009 would be a wonderful accompaniment to snacked veal sous la mère with shiitakes and rutabaga purée, crispy roast bacon with Périgord black truffle, beef Wellington with black garlic, hind leg with morels or roast pigeon with trumpets of death.
For a pairing with cheese, choose uncooked pressed cheeses: Edam, Gouda, Saint-nectaire, morbier, Tomme de Savoie or Salers.
For dessert, it will be a gourmet pairing with Yann Couvreur's Caribbean entremets, a vanilla and praline tart or a black forest.
Ageing potential and tasting:
Château La Conseillante 2009 has great cellaring potential, being able to wait several more years in the cellar to reach its peak between 2035 and 2038.
However, it can be drunk now. To do so, take care to place the bottle the night before in the serving room at a room temperature between 15 and 18°C. Open it and decant it at least 6 to 7 hours before tasting.
The bottles will be kept in the cellar, protected from light, lying down, with an optimal hygrometric degree of 70%.
