More Rare than XO, Cognac Extra is at the top of the eaux-de-vie hierarchy. Officially, it must be made from Cognacs aged for at least 10 years in oak casks. In reality, most houses include much older eaux-de-vie, often 15 to 30 years old, or even more.
Why this discretion? Because the "Extra" appellation is not strictly regulated like XO or XXO. It is an internal requirement of the houses, a sign of confidence in their know-how. Only the biggest names dare to put this name on a cuvée.
The Cognac Extra is therefore a connoisseur's choice: controlled power, exceptional length on the palate, incomparable aromatic richness. Candied fruit, sweet spices, noble rancio, sometimes even hints of leather and blond tobacco... a complexity for demanding connoisseurs.
XO, Extra, XXO: three names, three experiences. All refer to highly aged Cognacs, but there are nuances to be aware of if you're looking for a very specific aromatic profile.
In terms of price, the Extra falls between the XO and the XXO, but can sometimes exceed them, depending on the Rarequality of the eaux-de-vie used. This is a prestige category, designed for demanding people in search of an intense, well-balanced Cognac.
Cognac is aged in oak barrels, mainly from Limousin or Tronçais. The eau-de-vie remains there for several years, in contact with the wood and ambient air.
It gains its amber color, loses alcohol and develops complex aromas. Each cellar, each barrel, each humidity level plays its part. It's a delicate balance between evaporation, concentration and oxidation.
A Cognac Extra is ideal for quiet, special or intimate occasions. It can be opened for a birthday, a big news event, or simply to extend a dinner among connoisseurs.
It's a Cognac for the end of a meal, to be savored unhurriedly, alone or with quality conversation.
Store upright, in a cool place, Sec and away from light. A closed bottle can be kept for years without losing quality.
Once opened, consume within the year. Oxygen and temperature variations are its only enemies.
