The history of Maison Dujac began in 1968, when Jacques Seysses and his wife Rosalind acquired their first parcels of vines at Morey-Saint-Denis, in the heart of the Côte de Nuits en Bourgogne. Jacques, a wine enthusiast of Bordeaux origin, brought with him a fresh take on Burgundian winemaking, while respecting the region's age-old traditions and know-how. Indeed, it is in tribute to Jacques Dujac, Rosalind's grandfather, that the House is named "Dujac", marking a family heritage that endures.
Over the years, the Seysses family has expanded its Domaine by acquiring new parcels in some of the greatest terroirs of Bourgogne. Today, Maison Dujac's Domaine extends over a considerable area of vines, spread over several prestigious appellations such as Morey-Saint-Denis, Gevrey-Chambertin, and Vosne-Romanée, to name but a few. Morey Saint Dénis villages comes from 6 parcels, around 3 hectares of Pinot Noir, at the foot of the hillside to the east of the village, with a north-east to due south orientation. The soil is rich in silt punctuated by limestone pebbles. They will be more or less destemmed, depending on the vintage and the plot of origin, to preserve a silkier feel. Fermentation is triggered naturally by the indigenous yeasts in the grapes. Aging lasts 15 months in French oak barrels, 50% of which are new. Bottling is by gravity only, without fining or filtration. Finally, the wines are released only after a few months' rest in the cellar.
La robe of this wine is light ruby to carmine red. The nose exudes aromas of wild berries, redcurrant, black plum, cinnamon and warm spices. The palate is supple, elegant but also vinous. Black fruits, like blueberry, as well as stone fruits, like cherry, offer powdery tannins just counterbalanced by a light, salivating acidity.
This Morey Saint Denis Villages 2021 from Maison Dujac will be the ideal companion for sautéed veal sweetbread, smoked spinach and chanterelle mushrooms, sprinkled with a hint of licorice, or simply a roast duck breast with Espelette chili.
