In the heart of the village of Aÿ, the House Bollinger enjoys a universal prestige that is no longer to be proven, always in search of excellence. Proof of this is the fact that on the one hand, Bollinger is one of the Rares to own and produce their own grapes for the production of their vintages, but that it is also the only one to still have a cooper in residence. 

The latter maintains the 3500 barrels, some of which are over 100 years old, day after day. A centuries-old know-how that the House Bollinger is committed to perpetuate.

The origin of the House Bollinger is intimately linked to Athanase de Villermont (born in Cuis in 1763 and died in Aÿ in 1840), an admiral in the French army who distinguished himself in the American War of Independence and in particular at the Battle of the Chesapeake on April 29, 1781. A few years later, he inherited a vast Domaine family estate in the vicinity of Aÿ, a terroir renowned for the quality of its wines, which were not officially named "Champagne" until the creation of the Appellation d'Origine Contrôlée in 1936.

Description Bollinger Vieilles Vignes Françaises 2012.

At the beginning of the 20th century, the Champagne vineyards were destroyed by phylloxera. Everything had to be replanted with rootstocks from American plants, which were resistant to the devastating bug. Everything, with the exception of two parcels, very close to the Maison Bollinger, "Les Chaudes Terres" and "Le Clos St Jacques", 31 ares of Pinot Noir in total, surrounded by walls that seem to protect the vines. 

Beyond the excellence of their fruit, the old French vines are a duty to remember. Everything is done in the pure Champagne tradition. The soil is worked by hand with the help of a draught horse. The vines are planted in crowds using the provignage method, a technique that has totally disappeared in modern viticulture, and which enables a vine to be multiplied by burying the shoots, while preserving its characteristics.

Fermentation takes place in small oak barrels and maturation takes place under cork for 8 years. Racking and disgorging are always manual and finally the dosage is 6g/L.

This exceptional cuvée was produced in 2193 bottles only.

This Champagne is adorned with an intense golden yellow color.

On the nose, there are notes of candied pear and apricot compote, complemented by aromas of roasting, hazelnut and dark chocolate, then gingerbread.

The attack on the palate is round and powerful, gourmet with white-fleshed and yellow fruits, complemented by toasted almond and toastiness. Freshness is present, carried by lemon zest and ginger. The finish is smooth and long.
