The reds are harvested by hand at full maturity, vinified in whole bunches and aged in barrels with a moderate proportion of new barrels to pRéserver the subtlety of the climates. The dense, fresh whites are gently pressed in whole bunches and aged on fine lees, ensuring balance and minerality.
