Hennessy

The Cognac Hennessy is one of the world's most prestigious Cognac houses, renowned for its exceptional craftsmanship and the outstanding quality of its eaux-de-vie. Founded in 1765 by Richard Hennessy, this house has a long history and an unrivalled tradition in the production of Cognac.

The history of the Hennessy family dates back to the 18th century, when Richard Hennessy, an Irish officer in the service of the King of France, decided to settle in Cognac, in the Charente region, to set up in the brandy trade. Drawing on his expertise and knowledge of the market, Richard Hennessy quickly made a name for himself, producing Cognacs of exceptional quality.

Over the generations, the Hennessy family has passed on its winemaking know-how and heritage, contributing to the worldwide renown of the house of Cognac. Today, Hennessy belongs to the luxury group LVMH, while remaining true to its values of excellence and tradition.

The terroir of the Charente region is a fundamental element in the production of Cognac Hennessy. Vineyards extend over some 70,000 hectares, covering six appellation contrôlée zones, the most prestigious of which are the crus of Grande Champagne and Petite Champagne. These terroirs, characterized by limestone soil, benefit from a moderate oceanic climate, creating ideal conditions for growing the Ugni Blanc, Folle Blanche and CoLombard grape varieties.

Description Hennessy XO.

This is a Cognac blend of around a hundred eaux de vie from the 4 premier crus of the Cognac region: Petite Champagne, Borderies, Fins Bois and Grande Champagne classified Premier Cru from the Cognac region, the oldest of which are approaching thirty years old.

Hennessy X.O was acquired in 1870. At the origin of this project, the meeting between two men and their common will: Maurice Hennessy, fourth generation of Hennessy at the head of the House, and Emile Fillioux, third generation of Master Blenders.both are driven by the search for innovation and the quest for the perfect blend of eaux-de-vie. 

It was in 1865 that a major breakthrough was made with the creation of the star coding of the House's Cognacs. This innovation would enable consumers to know the exact age and category of the eaux-de-vie they were buying. 

Subsequently, the collaboration between these two men would lead to the development of the blending culture as it is still known today. 

At its creation, Hennessy X.O was not destined to enter the history of the House and become a Cognac emblematic of its savoir-faire.  

This cuvée was not marketed and was reserved exclusively for a circle of intimates. 

It was therefore in 1870, on the occasion of a lunch at Château in Bagnolet, that Cognac Hennessy Extra Old was offered for tasting to a circle of close friends.

The Cognac Hennessy X.O, with its subtle profile on spicy and woody notes, is the fruit of a careful selection of eaux-de-vie: deep and powerful, they are distinguished by their character, but also by their ability to balance. 

It is with this meticulous blending that we obtain this robust and rich Cognac, pairing remarkably well with veal tartare cut with a knife.
