The history of Château dates back to the 19th century, when Ferdinand Bouffard acquired the property in 1868. This acquisition laid the foundations for the Bouffard family in the world of Bordeaux wine and vineyards. However, it was under the management of the Perse family that the property underwent a major transformation.

In 1998, Gérard Perse and his family purchased Château Pavie-Decesse. Gérard Perse is a wine enthusiast and visionary entrepreneur, and has invested heavily in modernizing the property. His commitment to quality and winemaking tradition has been essential in restoring Pavie-Decesse to its former glory. He has also implemented organic and biodynamic viticulture practices in the vineyards, contributing to environmental sustainability.

The Domaine extends over some 8 hectares of vines, mainly planted with the Merlot grape variety, which is predominant in the Saint-Émilion region. These vineyards benefit from an exceptional terroir, composed of clay-limestone soils, which give the grapes a unique aromatic richness, structure and elegance.

The specialty of Château Pavie-Decesse lies in the production of Saint-Émilion red wines of great power and complexity. The Domaine is particularly well known for its resolutely traditional approach to winemaking, which includes fermentation in oak vats and aging in French oak barrels. This method imbues the wines with refined tannic structure, aromatic depth and the ability to age beautifully over the years.
