In the heart of the village of Aÿ, the House Bollinger enjoys a universal prestige that is no longer to be proven, always in search of excellence. Proof of this is the fact that on the one hand, Bollinger is one of the Rares to own and produce their own grapes for the production of their vintages, but that it is also the only one to still have a cooper in residence. 

The latter maintains the 3500 barrels, some of which are over 100 years old, day after day. A centuries-old know-how that the House Bollinger is committed to perpetuate.

The origin of the House Bollinger is intimately linked to Athanase de Villermont (born in Cuis in 1763 and died in Aÿ in 1840), an admiral in the French army who distinguished himself in the American War of Independence and in particular at the Battle of the Chesapeake on April 29, 1781. A few years later, he inherited a vast Domaine family estate in the vicinity of Aÿ, a terroir renowned for the quality of its wines, which were not officially named "Champagne" until the creation of the Appellation d'Origine Contrôlée in 1936.

Cuvée La Grande Année is only produced in great vintages, when the berries are perfectly balanced, like this concentrated, generous 2015, which comes from terroirs classified as Premier and Grand Cru, such as Aÿ, Verzenay and Mareuil for the 60% Pinot Noir and Chouilly and Avize for the 40% Chardonnay.

It is the most representative of the Bollinger style, which has never abandoned traditional methods: vinification is still carried out exclusively in small 20-year-old barrels ; maturation takes place under cork for twice as long as the canons of the appellation ; riddling and disgorging are always manual ; and a moderate dosage of 8g/L is applied.

The Grande Année 2015 is concentrated and generous, while retaining elegance and minerality.

The color is a sparkling golden yellow, a testament to the wine's ripeness and Bollinger winemaking methods.

The nose is complex and opens up in layers. First, there's richness, with notes of stone fruit, gray apple, mirabelle plum and honey. Then comes the finesse and freshness of small berries, blackberry, blackcurrant, cherry and raspberry. Finally, there's a touch of sweetness, with mango, almond, cinnamon and vanilla.

On the palate, the attack is full-bodied and fleshy, with a creamy effervescence. There are notes of plum and apricot jam, but also the warmth of chocolate. The finish brings balance, with the tart freshness of citrus and the minerality of these great terroirs.

This Champagne La Grande Année 2015 from Maison Bollinger is a perfect match for pan-fried foie gras with caramelized apples, or roast duck breast with raspberry-cranberry sauce.
