In the heart of the village of Aÿ, the House Bollinger enjoys a universal prestige that is no longer to be proven, always in search of excellence. Proof of this is the fact that on the one hand, Bollinger is one of the Rares to own and produce their own grapes for the production of their vintages, but that it is also the only one to still have a cooper in residence. 

The latter maintains the 3500 barrels, some of which are over 100 years old, day after day. A centuries-old know-how that the House Bollinger is committed to perpetuate.

The origin of the House Bollinger is intimately linked to Athanase de Villermont (born in Cuis in 1763 and died in Aÿ in 1840), an admiral in the French army who distinguished himself in the American War of Independence and in particular at the Battle of the Chesapeake on April 29, 1781. A few years later, he inherited a vast Domaine family estate in the vicinity of Aÿ, a terroir renowned for the quality of its wines, which were not officially named "Champagne" until the creation of the Appellation d'Origine Contrôlée in 1936.

The cuvée R.D. de Bollinger was born in 1963, when Madame Bollinger decided to market a few bottles of "Réserve 1947".

The idea was to choose an old vintage, young, disgorged and dosed like a Extra-Brut, to guarantee freshness alongside powerful aromas testifying to long vinification in oak barrels. This unique cuvée is named Bollinger R.D. for "Récemment Dégorgé".

2008, what a great vintage !!! A year marked by cold weather in Champagne, where it was not until the end of April that no more negative temperatures were recorded. May, June and August were cool and rainy, leaving doubts about the quality and quantity of the future harvest. The 2 sunny, warm and dry weeks of mid-July and early September will ensure full ripeness and impeccable harvest quality.

The blend of the 2008 vintage is composed of 71% Pinot Noir and 29% Chardonnay from mostly Aÿ and Verzenay for the Pinot Noir and Mesnil-sur-Oger and Cramant for the Chardonnay.

Fermentation is carried out entirely in oak barrels. Bollinger R.D. is marketed just a few months after disgorging with a very low dosage, known as "Extra Brut", just 3 grams per liter, which guarantees great freshness.

This Champagne presents itself with a light amber color with golden highlights.

The nose is gourmet, rich of mirabelle plum, dry and candied apricot, honey, but also breadcrumbs, marzipan, and refreshed by bergamot, ginger and caraway.

The palate is dense and precise, full of energy ; we find white plum, vine peach, some citrus notes and fresh hazelnut. The finish is saline, with incredible tension and lingering aniseed.

This magnificent cuvée R.D. 2008 from Maison Bollinger is made of boldness and splendor.

It will sublimate scallops with hazelnut or poularde de Bresse sauce ginger and saffron.
