Description Roger Brun 4 Nuits Brut Nature Rosé de Saignée 2017.
It is a brut nature champagne coming exclusively from the Aÿ vineyard classified Grand Cru. It is a blanc de noirs, composed exclusively of 100% Pinot Noir grape variety and the vines are exposed due south, an optimal exposure for the maturation of the grapes at the time of the harvest.
70% of the reasons come from young vines to bring a certain freshness and 30% from old vines for the aromatic structure and roundness, thus giving the wine a nice balance.
The vinification is carried out according to the principle of "Rosé de Saignée" which consists in letting the freshly harvested grape juice macerate for 4 nights, hence its name, with the skin of the grapes which will give the wine this brilliant rosy color with amber reflections
On the nose and on the palate: elegant touches of citrus zest finely mixed with jelly notes of small red fruits such as raspberries or Plougastel strawberries or Mara des Bois. Nice tips of small red and white currants and citron zest
Food / wine pairing: to be served between 10-12 ° C with a chiffonade of Bayonne or Pata Negra ham from Spain or with a smoked salmon as a starter Excellent with grilled fish on the plancha or with soft cheeses like chaource or fourme d'Ambert.
Bottles lying down to store in the cellar away from light and noise with a humidity of around 70%. We suggest successive tastings in order to measure its evolution until its qualitative peak.
