Salon

It was Eugène-Aimé Salon who founded and gave his name to Maison Salon, based in Mesnil-sur-Oger, one of the 17 villages classified Grand Cru in the Champagne at the very top of the Champagnes quality hierarchy.

This is a Champagne made from the best plots planted with Chardonnay on Côte des blancs. This House produces only one Champagne: Cuvée Salon Grand Cru. Only exceptional years are Millésimées and the wines are cellared for an average of 10 years.

This is therefore a Champagne that is mono-terroir (the Côte des blancs), mono-cru (Le Mesnil-sur-Oger), mono-varietal (Chardonnay) and mono-millésime.

The House of Salon released just 37 Vintages in the 20th century.

Description Salon 2013.

Champagne iconic, long-awaited by collectors every year, which comes from a single terroir, Côte des blancs, a single cru, Le Mesnil-sur-Oger, a single grape variety, Chardonnay and a single year, the 2013 vintage.

This wine, produced in small volumes, comes from the one-hectare "Jardin Salon" and nineteen other small parcels located at Mesnil-sur-Oger.

The wines are aged in the cellar for an average of ten years before revealing their full complexity.

Selected for their exceptional ageing potential, the quintessence of Blanc de blancs, the 2013 vintage will be the 44th produced by the house since its creation.

Salon 2013 offers a sparkling robe in natural light; in the glass, golden hues merge with green reflections, faithful revelators of great blanc de blancs.

White flowers, lime blossom, jasmine and bergamot zest make up its bouquet imbued with a typical mesniloise minerality.

The dimension of the terroir is revealed, subtle and profound. Both rich and long, the palate shows perfect balance, all restrained power.

The warmth of the vintage is palpable; witness the wine's solid structure and round, suave aromas of baked apple, toasted hazelnuts, salted butter caramel.

The chalky, salivating finish carried by an evanescent bubble is the signature of Salon. Origin has the last word, Le Mesnil expresses itself at its straightest, its fullest, its most chiseled; Salon 2013 conceals an unsuspected strength that bursts forth into the open.

This exceptional cuvée will pair perfectly with iodized dishes or even meat-based dishes to bring out its full potential.

Appreciate its iodized minerality with a salmon terrine with oysters in jelly, see how proudly it responds to the Champagne specialty of pig's trotter with sweetbreads, or test its round, silky texture with a foie gras cromesquis.

Serve it barely chilled, between 13° and 15°.
