Paul Giraud

This very old family of winegrowers traces its origins back to around 1650. Since then, generation after generation, each Giraud has carried out the same gestures for nearly four centuries, accumulating a priceless heritage and knowledge.

Their vineyards, totaling 50 hectares, are both located on the Grande Champagne terroir classified Premier Cru in the Cognac Region, a classification at the very top of the qualitative hierarchy of Cognacs produced in the heart of the delimited production area.

The family's vineyards are located in the shadow of the Château of Montmorency-Bouteville, a famous French family close to the Crown of France, in Bouteville and Saint-Même, two villages renowned for the quality of their limestone soils.

The grapes are harvested by hand. Their Cognacs, some of which are 50 years old, are aged in Limousin oak barrels in very humid cellars, an optimal aging criterion sought after by the very professional Cognacs.

Description Paul Giraud Très Rare.

The entire vineyard Paul Giraud, or 42 ha, is located in Bouteville, in the heart of the Grande Champagne. The Giraud family relies on ancestral know-how (ploughing the soil, organic fertilizers, integrated pest management, manual harvesting for 2/3 of the vineyard, distillation in small 14hl and 18hl stills, particularly humid cellars, ...) to produce exceptional Cognacs, single-cru and single-year, of great finesse and aromatic intensity.

This Cognac Très Rare is aged in Limousin oak barrels for a minimum of 40 years. Its color is old gold with green highlights. The magnificent nose is typical of Grande Champagne, elegant, fruity, floral, woody and beautifully balanced. It opens with pear and an astonishing symphony of apples, caramelized apple, cider apple, hints of calvados, underlined by floral notes of rosewater and lavender. Then comes a fuller-bodied eau de vie, with spices, black pepper, cardamom, clove, wood, leather and blond tobacco. The palate is silky and round. Generous notes of orchard fruit, pastry (apple pie), toast and coffee liqueur. Very quickly, the rancio appears, accompanied by aromas of cigar box, leather, Sichuan pepper and sandalwood. 

This Cognac Très Rare is a very complex eau de vie offering great length and delicacy. It would be perfect with roasted langoustines with Espelette pepper and shellfish cream. For those with a sweet tooth, an original recipe tiramisu will do the trick perfectly.

The care we take when receiving wines in our cellars enables us to detect bottles with imperfections (dirty or faded labels, damaged capsules, etc.). In such cases, they are systematically set aside and never put online! Our preparation team selects only bottles with perfect presentation for your orders!

It is these bottles with slight external defects that we present to you in the "Existe en imparfaite" selection. These bottles are, of course, of "irreproachable" gustatory quality, but suffer from slight defects on the label or cap. We therefore offer them at a preferential price, making the pleasure of tasting them even more affordable.
