Today, Maison François Voyer benefits from Pierre Vaudon's family business, which covers 70 hectares, including 8 hectares of 1er cru Grande Champagne vines around Saint-Même-les-Carrières.

In the commune of Verrières, in Grande Champagne, 1er Cru of Cognac, Maison François Voyer has been cultivating vines and distilling eaux-de-vie for over 200 years.

Today, under the direction of Pierre Vaudon, cellar master and renowned oenologist, the house perpetuates know-how handed down through five generations.

Over the decades, Maison François Voyer has distinguished itself through its unwavering commitment to quality. As early as the late 19th century, Paul André, one of the Rares winegrowers to distill his own production, left a precious legacy, including eaux-de-vie that have received prestigious distinctions. Among them, a gold medal for a brandy over 50 years old at the brandy competition in Segonzac, capital of the Grande Champagne.

The 60s marked a turning point with Guy Chauchet, a fervent advocate of ageing eaux-de-vie, who enriched the house's stocks. It was also the time of the first successful bottlings. The revamping of the range in the 90s heightened connoisseurs' interest in this exceptional terroir.

This cognac’s color features deep amber tones, interspersed with reddish-mahogany highlights that signal a long and meticulous aging process. On the initial nose, distinct notes of dried fruit stand out—fresh walnuts and roasted hazelnuts—accented by sweet spices and a hint of vanilla. After a few minutes of breathing, the aromatic profile deepens with mellow woody nuances and a subtle hint of rancio—a signature characteristic of long-aged Grande Champagne eaux-de-vie. On the palate, the attack is round and enveloping, carried by a silky texture that gradually unfolds the dried fruit notes from the nose, followed by well-integrated woody and vanilla notes. The finish is long, warm, and lingering, with a slight hint of spice that pleasantly extends the experience. Food and Wine Pairings

François Voyer XO Gold is best enjoyed neat, as a digestif, in the quiet moments after a meal. Its bouquet of dried fruits and its woody, vanilla notes make it a natural companion to a square of grand cru dark chocolate at 70% or higher, whose bitterness complements the roundness of the blend. A premium, well-crafted cigar also beautifully extends the warm, lingering finish of this brandy without masking its aromatic complexity.

Aging Potential

To fully reveal its tertiary aromas, this cognac is best served in a tulip glass at 20–22°C, pouring 3 to 4 cl into the widest part of the glass. Gently warming the glass in the palm of your hand for a few minutes is enough to gradually release the rancio notes and noble spices—never over an open flame, which would burn off the most delicate volatile compounds. Bringing your nose closer to the glass in stages—first from a distance, then closer—allows you to first capture the volatile aromas and then the deeper nuances. Unlike wine, cognac no longer evolves once bottled: an unopened bottle can be stored indefinitely in a cool, dry place away from light, in an upright position. Once opened, it retains its qualities for several months, provided it is tightly recorked.

Grande Champagne and Charente expertise at the heart of François Voyer XO Gold

The Vintage in the Vineyard

Grande Champagne, Cognac’s premier cru, owes its reputation to its chalky limestone soils of Cretaceous origin—particularly deep around Segonzac—which give the eaux-de-vie their finesse and their exceptionally slow aging potential. François Voyer XO Gold is blended entirely from these select terroirs. The Ugni Blanc grape variety, found almost exclusively in the region, produces a dry base wine that is high in acidity and low in alcohol—characteristics ideal for Charente-style distillation. The Charente’s temperate oceanic climate, with its mild winters and warm summers, supports the gradual maturation of the vines and promotes the slow concentration of aromatic precursors.

Winemaking

After winemaking into dry white wine without chaptalization, the wines are distilled on their fine lees in Charente-style copper stills using the “repass” method: an initial heating produces the “brouillis,” which is then concentrated during the “bonne chauffe” into a “cœur de chauffe” at approximately 70% ABV. Maison François Voyer carries out this artisanal double distillation in small stills, ensuring precise control over the separation of the heads, heart, and tails. The eaux-de-vie are then aged in Limousin oak barrels—first in new barrels for three years to establish the structure, then in older barrels to allow the aromas to refine without excessive oakiness. Each year, the “angels’ share” carries away a fraction of the eau-de-vie through natural evaporation, gradually concentrating the noble compounds. The final blend, created by the House, combines eaux-de-vie aged between twenty and thirty years, before being gradually diluted to 40% ABV.
