Château Canon

Le Château Canon is inexorably associated with the finesse and elegance of Saint-Emilion's finest wines. The origin of its name is due to Jacques Kanon, a privateer in the Royal Navy who acquired it in 1760. 

Visionary, he instinctively understood the potential of this terroir and had vines planted there. In 1996, Château Canon was bought by Chanel, a company run by the Wertheimer family.

Château Canon was consecrated Premier Grand Cru Classé in the first edition of the Saint-Emilion classification in 1955, a position it has always maintained thanks to the excellence and timeless style of its wines.

Château Canon is planted in a 34-hectare vineyard on the clay-limestone plateau of Saint-Emilion. The grape varieties are 70% Merlot and 20% Cabernet franc. The vines are surrounded by walls to protect them from spring frosts, and the nature of the soils ensures that the grape varieties are always fresh and reach excellent ripeness.

The wines are aged for 18 months in French oak barrels, 70% of which are new. The estate produces a Second vin, Croix Canon, with the same attention to detail as the grand vin. 

The Château Canon imposes unforgettable wines of great class, featuring a sumptuous balance between tannic structure, purity of fruit and generosity.

Water, fire. Limestone as an ally. The vine cycle, despite the Sec and the humidity, persists. Energy on all fronts - life drive. Terroir, always, in response to excess.

Atmospheric jolts. Shivers and sweats. In the face of despotic weather, a stoic rock. Canon thwarts all expectations. Flowers, subtlety, length. The 2023 vintage takes delicate flight. The air, distiller of infinite nuances that melt and expand. In these high spheres, floral chorus and raspberry notes. Pepper, mint, an airy punch. Limestone reigns in silence. Length of shivering tongues - saline climax. All the intensity of the Canon signature.

Harvest : September 6 to October 4 for Merlot and September 20 to October 3 for Cabernet Franc.

Aging : 16 to 18 months with 50% new oak, including 3 foudres.

In terms of weather conditions, winter was mild and Sec, while spring was rather mild and wet, sometimes cool. Lovely flowering. A summer of contrasts : hot and humid, cool, then hot and Sec. Finally, a fine and warm autumn during the harvest.

Vinification by parcel and within each parcel, in temperature-controlled stainless-steel vats.
