Located in Côte des blancs, Domaine comprises 14 hectares of vines planted mainly with Chardonnay and located in Grand Cru Cramant and Premier Cru Cuis. The vineyard is managed using integrated pest management with a minimum of treatments and progressive grassing of the plots.
The wines of Réserve are made in vats or foudres and then stored in a cellar 14 meters underground for slow, regular aging, to bring out the typical roundness of Champagnes Diebolt-Vallois.
The Domaine Diebolt-Vallois is selected by Michelin-starred restaurants in Paris, such as Eric Fréchon's Epicure, Alain Passard's Arpège and Le Cinq, as well as the Flocon de Sel in Megève.
Located in Cramant, in the heart of the Côte des Blancs, Diebolt-Vallois is recognized as one of the leading specialists in Champagne Chardonnay. A family wine estate regularly praised for the precision of its wines and its exemplary purity of style, Diebolt-Vallois produces champagnes that are both classic and vibrant, expressing the finest qualities of the great chalky terroirs of Avize and Cramant. Although famous for its Blancs de Blancs, the house also produces a Brut Rosé of great delicacy, revealing a remarkable sense of balance.
The Brut Rosé has a slightly salmon-pink color with coppery highlights. The nose opens with an expressive and elegant bouquet featuring notes of wild strawberries, raspberries, and redcurrants. After a few minutes in the glass, delicate aromas of peony and white flowers emerge. The bouquet also gains depth thanks to a subtle touch of almond. On the palate, the attack is lively and precise, carried by a fine effervescence. The mid-palate shows a beautiful harmony between the richness of red fruits and chalky tension. Hints of citrus and raspberry add a touch of indulgence. The finish is pure, delicate, and persistent, marked by a salty sensation and a dazzling freshness that invites you to come back for more.
