Bollinger

In the heart of the village of Aÿ, the House Bollinger enjoys a universal prestige that is no longer to be proven, always in search of excellence. Proof of this is the fact that on the one hand, Bollinger is one of the Rares to own and produce their own grapes for the production of their vintages, but that it is also the only one to still have a cooper in residence.

The latter maintains the 3500 barrels, some of which are over 100 years old, day after day. A centuries-old know-how that the House Bollinger is committed to perpetuate.

What is the history of the House of Champagne Bollinger?

The men behind Bollinger

The origin of the House Bollinger is intimately linked to Athanase de Villermont (born in Cuis in 1763 and died in Aÿ in 1840), an admiral in the French army who distinguished himself in the American War of Independence and in particular at the Battle of the Chesapeake on April 29, 1781. A few years later, he inherited a vast Domaine family estate in the vicinity of Aÿ, a terroir renowned for the quality of its wines, which were not officially named "Champagne" until the creation of the Appellation d'Origine Contrôlée in 1936.

However, the conveniences of his aristocratic origins did not allow him to indulge in a commercial activity, which is why he associated himself in 1829 with Joseph Bollinger (known as Jacques Joseph Bollinger) and Paul Renaudin. He created a... See more ...

Description Bollinger Special Cuvée.

Bollinger's Special Cuvée embodies all the excellence and expertise of this iconic house. Carefully blended from 60% Pinot Noir, 25% Chardonnay, and 15% Pinot Meunier, this cuvée is sourced mainly from Grands and Premiers Crus, giving it exceptional depth and complexity. Aged in the cellar for over five years, this champagne reveals power, elegance, and finesse.

To the eye, the color is a luminous pale gold, traversed by fine, persistent bubbles that dance elegantly in the glass. On the nose, the aromatic expression is intense, seductive, and complex. Notes of ripe yellow fruit, fresh brioche, and toasted hazelnut develop, accompanied by subtle nuances of sweet spices and vanilla. The whole shows great harmony between maturity and freshness. On the palate, the attack is frank and precise. The texture is creamy and generous, supported by perfectly balanced acidity. The aromas perceived on the nose linger and are enriched with nuances of dried fruit and spices, offering a sensation of roundness and remarkable length. The finish, persistent and mineral, leaves an elegant and lasting impression, the sign of an exceptional champagne.

Ideal as an aperitif with sushi or smoked salmon maki. Perfect as a starter with Marennes-Oléron or Belon oysters. Surprisingly enjoyable with grilled fish, such as line-caught sea bass or red mullet.

ROSES2025

The care we take when receiving wines in our cellars enables us to detect bottles with imperfections (dirty or faded labels, damaged capsules, etc.). In such cases, they are systematically set aside and never put online! Our preparation team selects only bottles with perfect presentation for your orders!

It is these bottles with slight external defects that we present to you in the "Existe en imparfaite" selection. These bottles are, of course, of "irreproachable" gustatory quality, but suffer from slight defects on the label or cap. We therefore offer them at a preferential price, making the pleasure of tasting them even more affordable.

Club-tresors-de-champagne

Founded in 1971, the Club Trésors de Champagne is a very exclusive circle that brings together 25 of the region’s finest artisan winemakers. United by a love for their terroir, respect for traditional craftsmanship, and a vision for the future, these exceptional winemakers have been rigorously selected for the excellence of their work. The “Spécial Club” cuvée

Being a member of this highly exclusiveclub allows winemakers to produce a unique, vintage-dated prestige cuvée: the Spécial Club. Recognized as the ultimate symbol of their expertise, this cuvée undergoes a rigorous process to ensure impeccable quality.

To earn this coveted “label,” each bottle must pass through rigorous stages:

  • Ultra-strict specifications demanding authenticity and perfection.
  • Two successive blind tastings, conducted by a jury of five independent oenologists.
  • A unanimous verdict: The quality of the cuvée must receive the absolute unanimous approval of the jury to be entitled to bear the name “Spécial Club.”
