Devaux
The house of Champagne Devaux was founded shortly before the middle of the nineteenth century in 1846 by brothers Jules and Auguste Devaux.
Located in the heart of the Côte des Bars, Champagne Devaux highlights different practices, combined with a strong commitment to quality.
Unique know-how and standards at the cutting edge of the greatest Champagnes: plot selection accompanied by sustainable, reasoned viticulture and technical follow-up, such as the ageing of Réserve wines, blends made from first press wines, extended maturation. The average age of the vines is around 15 years.
The vineyards are planted on very chalky soils, a guarantee for harvesting wines of the highest quality. The vineyard is planted 90% with Pinot Noir grapes and 10% with Chardonnay grapes, and represents a surface area of around 600 hectares, belonging to several winegrower members, which enables Maison Devaux to release parcel-based cuvées.
Annual production is around 250,000 bottles per year. The Maison de Champagne Devaux has won numerous awards, including the Gold Medal at Mundes Vini in 2020 and a 97/100 by Decanter in 2019.

The pinhole is by definition a small hole in the wall of a darkroom, acting as a photographic lens. This cuvée is the story of a meeting between the house of Champagne Devaux & Rhône reference Michel Chapoutier, with the aim of revealing through a wine the photography of a vintage. Because 2010 deserved a special place: record cold (-23°C) in December, cool winter and spring and Sec torrential rain in August... Delicate conditions requiring good viticultural practices and rigorous sorting at harvest.
The image that reaches us and is revealed through the glass is bleak, to say the least: aromas of toasted bread, brioche and vanilla emerge on the nose, in a gourmand and comforting whole, all in finesse. The presence of lemony notes, in zest and candied, and fresh pear, bring fruitiness and freshness.
The palate is very sensual, with a dense, unctuous texture. A beautiful aromatic presence evokes the gourmet vanilla and brioche aromas we had on the nose, adding notes of praline and ripe wheat. Good tension, with hints of lemon and bergamot for freshness. The finish is long and finely iodized, with notes of persimmon, fresh brioche and Secs fruit, all in sublime delicacy. Sténopé 2010 is indeed the faithful portrait of a delicate year...
A limited series of 6,556 bottles and 589 magnums, each bottle numbered, that will reveal itself fully at table with ricotta and spinach ravioli, dill-marinated salmon or sea bass with mushrooms and shellfish.
