The Maison Cazals was founded in 1897 in Mesnil-sur-Oger by Ernest Cazals, a renowned cooper originally from the Hérault region of France who had married a Champagne woman.
Three generations have since succeeded one another at the head of the estate, and today DelpHine Cazals manages it with the same passion and enthusiasm to continually highlight this great terroir of Côte des blancs.
Delphine Cazals has run the company since the death of his father in 1996. The entire Cazals vineyard comprises 9 hectares of vines spread over 4 communes: Le Mesnil-sur-Oger, Oger, Vertus and Villeneuve. One part is therefore classified as Grand Cru and the other as Premier Cru. All vines are planted with Chardonnay to create cuvées with their own identity, full of finesse and aromatic power. The oceanic climate with continental influences is conducive to its development.
One of Maison Cazals' assets is an exceptional parcel of land classified as Grand Cru in a delimited area: Le Clos Cazals, covering 3.70 hectares of old vines in the village of Oger.

This cuvée is a Rosé d'assemblage Grand Cru. It is made from 88% Oger Chardonnay and 12% Bouzy Pinot Noir. It is based on the 2020 vintage, with 20% wine from Réserve. After hand-harvesting, the juice is vinified in temperature-controlled stainless-steel vats without stopping malolactic fermentation. This is followed by 3 years' ageing on the lees in the vaulted cellars of Domaine. After disgorgement, this Rosé XV receives a light dosage of 4.5 g/L.
The year 2020 was testing, with an early drought that lasted until September. However, at Clos Cazals the strong chalky minerality of the Oger terroir enabled us to produce a harvest of very good quality, with grapes carrying freshness and vivacity.
La robe of this Champagne Rosé is coppery and luminous, enhanced by very fine bubbles. The nose combines the expressive notes of candied red and black fruit typical of mature Pinot Noir with the delicate white fruit and citrus notes typical of Chardonnay. And to add a gourmet touch, warmer aromas of pastries and roasting round out this complex bouquet. The wine finishes with a beautiful minerality. The palate is also generous and dynamic, with notes of juicy black cherry, combined with white peach and lemon. The finish is long, chalky with its fine bitters, and tangy, all freshness.
This Rosé XV Grand Cru from Maison Cazals is destined for gastronomy. On the seaside, offer him a tuna tataki or a seafood platter, for a precise and refined match, all in opposition.
